Green Soup
Ingredients:
1 tsp olive oil
1 cup of mushrooms diced
2-3 dried shitake / porchini mushrooms
1 small onion diced
3 cups of vegetable stock
400gm sliver beet chopped roughly (leave stalks behind)
3 cups of frozen peas
Salt & pepper to taste
Squeeze of lemon juice
Method:
- Brown mushrooms and onions really well. You want them really caramalised to create flavour 
- Add vegetable stock and bring to the boil 
- Add silver beet and peas and cook for 3-4 minutes 
- Take off the heat and whizz until a very smooth bright green consistency 
- Serve and enjoy with a fresh squeeze of lemon
